Strawberry Chicken Salad!

One of my favorite go to salads this time of the year is a strawberry chicken salad with goat cheese. It’s light, refreshing and will keep you feeling full.


Choose your choice of lettuce; I always say the darker the green the better for you. Dark leafy greens such as spinach or kale are high in Iron, Folate and Vitamins A, C and K.


Add grilled chicken, goat cheese, toss in red onion and either sliced almonds or walnuts for that crunch we are always looking for. Balsamic vinaigrette or lime vinaigrette is the perfect dressing to complete this salad.

You might notice on here I don’t have any portion sizes and that’s because I don’t believe in weighing or measuring food. I believe it is important to eat the right foods, the right combination of food and at the right time.


Eating this salad without the chicken might not keep you full so it is important when eating your salads you always have some source of protein whether it’s chicken, beans, or quinoa. Then use everything else as an added flavor to jazz up your salad. Be creative! Add new toppings! And enjoy!
